The origins of fried chicken are debated, but it’s believed to have been brought to the American South by Scottish immigrants in the 1700s. Since then, fried chicken has become a staple of Southern cuisine and a beloved comfort food for many.

To make Southern fried chicken, you’ll need:

– 4-6 chicken pieces (legs, thighs, wings, or breasts)

– 1 cup of all-purpose flour

– 1 tablespoon of salt

– 1 tablespoon of black pepper

– 1 tablespoon of garlic powder

– 1 tablespoon of paprika

– 1/2 tablespoon of cayenne pepper (optional)

– 1 cup of buttermilk

– Vegetable oil for frying

Start by seasoning the chicken pieces with salt and black pepper. In a shallow bowl or dish, mix together the flour, garlic powder, paprika, and cayenne pepper (if using).

Dip each chicken piece in the buttermilk, then coat it in the seasoned flour mixture, shaking off any excess. Place the coated chicken on a wire rack and let it rest for 10-15 minutes to allow the coating to set.

Meanwhile, heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350-375 degrees Fahrenheit. Carefully lower the chicken pieces into the hot oil, being careful not to overcrowd the pot. Fry the chicken for 12-15 minutes, turning occasionally, until the coating is golden brown and the chicken is cooked through (the internal temperature should reach 165 degrees Fahrenheit).

Remove the chicken from the oil and place it on a paper towel-lined plate to drain off any excess oil. Serve hot with your favorite sides, like mashed potatoes, mac and cheese, or collard greens.

Southern fried chicken is a classic dish that’s sure to impress. It takes a little practice to get the technique just right, but with a little patience and care, you can create a delicious meal that will satisfy even the pickiest eaters. So grab your apron and get frying!
