  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 2-3 hours, or until the beans are tender and the mixture has thickened.
  3. Remove the bay leaves and season with salt and pepper to taste.
  4. Serve the red beans and sausage over cooked rice and garnish with chopped green onions.
